Espresso Extraction Explained: Dose, Yield, Time & Brew Ratio

Espresso can seem complicated because a small amount of coffee is affected by several variables at once. Change the grind, dose, yield, temperature, or preparation technique and the espresso can taste noticeably different.

For a working barista, the goal isn't to memorize every aspect of extraction science. It's to understand the variables well enough to prepare espresso consistently, recognize when something has changed, and know what to adjust.

Four measurements provide a useful foundation:

Dose, yield, brew ratio, and extraction time.

Once you understand how these work together—and learn to connect the numbers with what you're tasting—espresso becomes much easier to troubleshoot.

What Is Espresso Extraction?

Espresso extraction is the process of using hot water under pressure to dissolve and carry flavor compounds from finely ground coffee into the cup.

When water contacts coffee, it doesn't extract everything at once. Different compounds dissolve at different rates, and the final flavor is affected by how much is extracted and how evenly the water moves through the coffee.

This is why preparation matters so much.

Grind too coarse and water may move through the coffee very quickly. Grind too fine and water may struggle to move through the coffee bed. Poor distribution can allow water to find easier pathways through one section of the puck while extracting another section differently.

The goal is not to extract everything from the coffee.

The goal is to create an espresso that tastes balanced, sweet, and representative of the coffee you're serving.

The Four Measurements Every Barista Should Understand

When training baristas, we recommend beginning with four practical measurements.

Dose

Dose is the amount of dry ground coffee placed into the portafilter basket.

If you grind 18 grams of coffee into the basket, your dose is 18 grams.

Yield

Yield is the weight of the liquid espresso produced.

If 18 grams of ground coffee produces 36 grams of espresso in the cup, your yield is 36 grams.

Brew Ratio

Brew ratio describes the relationship between dose and yield.

An 18-gram dose producing 36 grams of espresso is a 1:2 brew ratio.

Extraction Time

Extraction time measures how long it takes to produce the desired yield.

If an 18-gram dose produces 36 grams of espresso in 28 seconds, your basic recipe can be recorded as:

18g dose → 36g yield → 28 seconds

Those three numbers give another barista a much clearer standard than simply saying, "Pull a double espresso."

Understanding Espresso Dose

Dose is the starting amount of coffee used for an espresso.

Modern commercial espresso baskets come in different sizes and are designed to work with an appropriate range of coffee.

You may encounter cafés using 16, 18, 20, 22 grams, or other doses depending on the basket, coffee, equipment, and recipe.

There is no universal dose that every coffee shop should use.

What's important is establishing an appropriate dose for your equipment and recipe and then using it consistently.

If your house espresso recipe calls for 18 grams but employees are dosing anywhere from 17 to 20 grams, you're introducing a significant variable before extraction even begins.

That makes everything else harder to control.

Why Basket Size Matters

Espresso baskets are designed to hold a certain amount of coffee.

Using dramatically too much or too little coffee for the basket can affect the space between the coffee bed and the shower screen, the way water moves through the puck, and the consistency of extraction.

Don't choose a dose simply because another coffee shop uses it.

Start with a basket appropriate for the desired dose and develop the recipe from there.

Equipment manufacturers and your coffee roaster can often provide useful starting recommendations.

Understanding Espresso Yield

Yield tells us how much espresso ends up in the cup.

Traditionally, espresso was often described by volume: a one-ounce shot, a two-ounce shot, and so forth.

Weight gives baristas a more precise and repeatable measurement.

Crema can make two espressos with the same liquid mass appear to have different volumes. Fresh coffee may produce a large amount of crema, making visual measurement especially unreliable.

A scale removes that uncertainty.

If the target is 36 grams, you can stop the shot at approximately 36 grams regardless of how much crema is present.

For training and quality control, this makes espresso much easier to reproduce.

What Is Espresso Brew Ratio?

Brew ratio is simply the relationship between the amount of dry coffee used and the amount of espresso produced.

If you use 18 grams of coffee and produce 36 grams of espresso:

18g : 36g = 1:2

If you use 18 grams and produce 27 grams:

18g : 27g = 1:1.5

If you use 18 grams and produce 45 grams:

18g : 45g = 1:2.5

Brew ratio gives baristas a useful language for discussing espresso recipes.

Instead of saying, "Make the shot a little longer," we can describe exactly what changed.

Ristretto, Espresso and Lungo

You may hear espresso recipes described as ristretto, normale, or lungo.

Traditionally, these terms describe shorter and longer espresso preparations, although definitions vary considerably between cafés and coffee cultures.

A ristretto generally uses a lower beverage yield relative to the dose, producing a more concentrated espresso.

A longer espresso or lungo uses a greater beverage yield relative to the dose.

In modern specialty coffee, many cafés rely more heavily on measured brew ratios because they communicate the recipe more precisely.

Rather than debating exactly what qualifies as a ristretto, a barista can say:

We're using an 18-gram dose with a 30-gram yield.

Everyone immediately knows what the recipe means.

How Does Brew Ratio Affect Flavor?

Changing yield can have a significant effect on flavor.

A shorter yield produces a more concentrated espresso and generally extracts less from the coffee.

A longer yield allows more water to move through the coffee and generally extracts more.

That doesn't mean shorter is better or longer is better.

Some coffees benefit from a longer ratio that opens up sweetness and clarity. Others may taste better with a shorter, more concentrated preparation.

Roast development can also influence the recipe. A lighter-roasted coffee may behave very differently from a darker espresso blend.

This is why espresso recipes should be developed for the coffee being served rather than inherited blindly from another café.

Understanding Extraction Time

Extraction time measures how long water is flowing through the coffee to reach the desired yield.

A common espresso recipe might look something like:

18 grams in → 36 grams out → approximately 25–30 seconds

But 25–30 seconds is not a universal rule for espresso.

Some coffees and recipes may taste excellent at 22 seconds. Others may taste better at 32 seconds or beyond.

Time is valuable because it helps us understand what's happening during extraction.

If your espresso usually produces 36 grams in approximately 28 seconds and suddenly reaches 36 grams in 18 seconds, something has changed.

Perhaps the grind needs adjustment.

Perhaps the dose changed.

Perhaps puck preparation was poor.

Extraction time helps alert us to a problem.

It doesn't tell us everything about the solution.

Why Grind Size Has Such a Big Impact

Grind size is one of the primary variables baristas adjust throughout the day.

When coffee is ground finer, the particles present more surface area and create greater resistance to water moving through the coffee bed.

All else being equal, a finer grind will generally slow extraction.

A coarser grind creates less resistance and generally allows water to move through the coffee more quickly.

This gives us a useful starting rule:

Espresso running too quickly? Try grinding finer.

Espresso running too slowly? Try grinding coarser.

The key phrase is "all else being equal."

If your dose or puck preparation changes at the same time, the diagnosis becomes more complicated.

Extraction Isn't Just About Speed

It is tempting to think of espresso extraction simply as water moving too quickly or too slowly.

What's actually happening inside the coffee bed is more complicated.

Ideally, water should move relatively evenly through the entire puck.

If one area of the coffee bed offers much less resistance, water can find that easier pathway and move through it more quickly.

This is commonly called channeling.

One part of the coffee may be heavily extracted while another part is barely extracted at all.

The resulting espresso can contain characteristics we associate with both under- and over-extraction.

This is one reason puck preparation matters.

What Causes Channeling?

Channeling can be caused by several things, including:

* Uneven distribution of coffee in the basket * An unlevel tamp * Clumps or inconsistencies in the coffee bed * Poorly matched dose and basket size * Disturbing the puck after tamping * Equipment or water-distribution issues

Sometimes channeling is visually obvious. You may see an uneven extraction, early blonding in one area, or spraying when using a bottomless portafilter.

Other times you notice it primarily in the cup.

Good distribution and consistent tamping help create an even coffee bed and give water fewer opportunities to find unintended pathways.

What Is Under-Extracted Espresso?

Under-extraction means that too little desirable material has been extracted from the coffee.

An under-extracted espresso may taste:

* Sharp * Sour * Salty * Thin * Hollow * Lacking in sweetness * Short in the finish

A very fast extraction can contribute to under-extraction, but time isn't the only cause.

A grind that is too coarse, an overly short yield, poor puck preparation, or channeling can all contribute.

It's also important to remember that acidity is a natural part of coffee.

A bright citrus acidity in a well-extracted Ethiopian coffee isn't automatically a defect.

The question is whether that acidity feels balanced by sweetness, body, and the other characteristics of the coffee.

What Is Over-Extracted Espresso?

Over-extraction occurs when the extraction has moved beyond the most desirable balance for that coffee.

The espresso may taste:

* Dry * Harsh * Hollow * Overly bitter * Astringent * Unpleasantly lingering

A very fine grind or excessively long yield may contribute to these characteristics.

Again, bitterness itself isn't necessarily bad.

Coffee contains bitter compounds, and some bitterness can provide structure and balance.

The goal is not to eliminate acidity and bitterness.

The goal is to find a pleasant balance between acidity, sweetness, bitterness, body, and finish.

Extraction and Strength Are Not the Same Thing

This distinction is important.

Strength describes how concentrated the beverage is.

Extraction describes how much soluble material was removed from the ground coffee.

An espresso can be strong but under-extracted.

For example, a very short espresso may be extremely concentrated but still taste sharp and undeveloped because relatively little has been extracted from the coffee.

A longer espresso may be less concentrated while achieving greater extraction.

This helps explain why simply describing an espresso as "strong" doesn't tell us very much about whether it was extracted well.

Why Temperature Matters

Water temperature affects extraction because hotter water generally extracts coffee compounds more readily than cooler water.

Many commercial espresso machines maintain brew temperature automatically, and baristas may not adjust temperature during normal service.

When developing an espresso recipe, however, temperature can be another useful variable.

Different coffees and roast levels may respond differently to changes in brewing temperature.

For everyday barista training, it's usually best to establish the café's temperature standard and focus first on mastering dose, yield, grind, time, and puck preparation.

Once those variables are controlled, temperature becomes much more useful as a recipe-development tool.

Water Quality Is Part of Espresso Extraction

Water is the primary ingredient in espresso, yet it is sometimes overlooked during troubleshooting.

The mineral content and chemistry of water affect how coffee extracts and tastes.

Water also affects the health of the espresso machine.

Water that creates excessive scale can damage equipment, while inappropriate filtration or mineral composition can negatively affect flavor.

Coffee shops should use a water-treatment system appropriate for their local water supply and equipment.

If espresso suddenly tastes dramatically different and nothing else has changed, water is one of the variables worth investigating.

Why Coffee Age Changes Extraction

Coffee continues to change after roasting.

Freshly roasted coffee releases carbon dioxide, a process commonly referred to as degassing. As the coffee rests and ages, the amount of gas changes.

This can affect espresso preparation and extraction.

A coffee that is very fresh may behave differently than the same coffee several days later. As a bag of espresso ages, you may find yourself making gradual grinder adjustments to maintain the same recipe.

This is normal.

Coffee isn't a manufactured ingredient with perfectly fixed characteristics. It is an agricultural product that continues changing after roasting.

A good espresso program accounts for that.

The Relationship Between Dose, Yield, Time and Grind

These variables become much easier to understand when you consider them together.

Imagine your house recipe is:

18g dose → 36g yield → approximately 28 seconds

The espresso tastes balanced.

The next morning you prepare the same 18-gram dose and target the same 36-gram yield, but it reaches that yield in 19 seconds and tastes thin and sharp.

Rather than changing everything, adjust the grind finer.

Now the same 18 grams produces 36 grams in 27 seconds.

Taste it again.

If the sweetness and balance return, you've brought the recipe back into range with one controlled adjustment.

This is the practical value of measuring espresso.

You're creating reference points that help you make better decisions.

Numbers Give You a Framework. Taste Gives You the Answer.

Espresso measurement has transformed professional coffee preparation for the better.

Scales, timers, precise grinders, and increasingly sophisticated espresso machines allow baristas to work with much greater consistency than visual measurement alone.

But measurement can become a trap if the numbers become more important than the beverage.

An espresso doesn't taste good because it took exactly 28 seconds.

It tastes good because the combination of coffee, water, recipe, extraction, and preparation produced a balanced cup.

If your target is 28 seconds and today's espresso tastes excellent at 30 seconds, don't automatically change it just to satisfy the timer.

Taste first.

Use the measurements to help understand why you're tasting what you're tasting.

A Practical Espresso Recipe for Training

When teaching espresso extraction, keep the first exercise simple.

Begin with the café's established recipe.

For example:

Dose: 18 grams Yield: 36 grams Target Time: approximately 25–30 seconds

Have the trainee prepare several shots while keeping dose and yield consistent.

Then intentionally change the grind.

Make it noticeably coarser and taste the result.

Return to the original setting.

Then make it finer and taste again.

Ask the trainee to compare the three espressos.

How did the extraction time change?

How did the body change?

What happened to the acidity?

Which espresso had the most sweetness?

Which finish was most pleasant?

Connecting measurements with sensory experience is one of the fastest ways to make extraction theory useful behind the bar.

Common Espresso Extraction Mistakes

Treating 25–30 Seconds as a Rule

It's a useful starting range for many recipes, but it isn't a definition of properly extracted espresso.

Ignoring Yield

Knowing that a shot took 28 seconds means very little if you don't know whether it produced 25 grams or 55 grams of espresso.

Measuring Volume Instead of Weight

Crema makes volume inconsistent. Weight provides a much more reliable measurement.

Changing Several Variables at Once

If you change dose, yield, and grind simultaneously, it's difficult to know which change affected the result.

Ignoring Puck Preparation

Perfect numbers don't guarantee even extraction.

Assuming Sour Always Means Under-Extracted

Some coffees naturally have pronounced acidity. Learn to distinguish pleasant acidity from an unbalanced extraction.

Assuming Bitter Always Means Over-Extracted

Roast level and the coffee itself also contribute bitterness. Evaluate the entire cup.

Never Tasting the Espresso

Measurement without tasting turns espresso preparation into an exercise in hitting numbers rather than making great coffee.

Frequently Asked Questions About Espresso Extraction

What is the ideal espresso extraction time?

There is no single ideal extraction time. Many espresso recipes fall somewhere around 25–35 seconds, but excellent espresso can fall outside that range. Extraction time should be evaluated together with dose, yield, grind, preparation, and taste.

What does a 1:2 espresso ratio mean?

A 1:2 ratio means producing two grams of espresso for every gram of dry coffee. An 18-gram dose producing 36 grams of espresso is a 1:2 brew ratio.

Is 18 grams the standard espresso dose?

Brew ratio describes the relationship between the two. Time helps you understand how the extraction is behaving. Grind gives you a powerful way to influence that behavior. And taste tells you whether all of those decisions are working.

Once those concepts are understood, espresso stops being a mysterious process of pushing buttons and watching a timer.

It becomes something a barista can observe, measure, taste, and improve.
