How to Steam Milk for Espresso Drinks: A Barista Guide

Steaming milk well is one of the most important skills a barista can develop. It affects the taste, texture, temperature, appearance, and overall quality of nearly every milk-based espresso drink on the menu.

The goal is not simply to make milk hot or create a layer of foam. Properly steamed milk should be smooth, glossy, sweet, and evenly textured, with tiny bubbles that are incorporated throughout the milk. This texture is commonly called microfoam.

Good milk takes practice. The good news is that once you understand what is happening in the pitcher and learn what to look, listen, and feel for, milk steaming becomes a repeatable skill.

What Is Microfoam?

Microfoam is milk that has been aerated and textured so that the bubbles are extremely small and evenly distributed throughout the liquid.

Properly textured milk should look glossy and have a smooth consistency rather than a stiff layer of foam floating on top.

When you swirl the pitcher, the milk should move together. You shouldn't see obvious separation between liquid milk and foam.

This texture is important for several reasons.

It creates a pleasant mouthfeel, integrates well with espresso, and allows a barista to pour drinks consistently. It is also the foundation for latte art.

Before worrying about hearts, tulips, or rosettas, learn to produce excellent milk.

The Two Stages of Steaming Milk

Milk steaming can be understood as two basic stages:

Aeration and texturing.

During aeration, the barista introduces air into the milk.

During texturing, that air is incorporated into the milk to create a smooth, uniform texture.

These stages overlap somewhat during steaming, but understanding the distinction makes the process much easier to learn.

Start With Cold Milk

Begin with cold milk and a clean, cold pitcher.

Cold milk gives you more time to introduce air and develop texture before the milk reaches its final temperature.

Pour only the amount you expect to use.

Overfilling the pitcher makes it difficult to create proper movement and increases waste. Underfilling can make the milk harder to control and may cause it to heat too quickly.

A useful starting point is to fill the pitcher to around the bottom of the spout, although the appropriate level depends on the pitcher design and beverage being prepared.

With experience, baristas learn to portion milk more accurately for each drink.

Reducing excess milk is not only a quality issue. Across hundreds of drinks, wasted milk can become a significant expense for a coffee shop.

Purge the Steam Wand

Before placing the steam wand into the milk, briefly open the steam valve.

Once you find the correct position, however, the milk itself provides plenty of feedback.

Stage One: Introduce Air

At the beginning of steaming, position the tip close enough to the surface to gently introduce air.

It should not sound like violent bubbling.

There is a point, however, where additional heat stops improving the experience.

Finish the Milk Immediately

Once the milk reaches the desired temperature, turn off the steam before removing the wand from the milk.

A repeatable steaming routine might look like this:

Select the appropriate pitcher. Pour the correct amount of cold milk. Purge the steam wand. Position the steam tip just below the surface. Turn the steam on fully. Introduce the desired amount of air while the milk is cool. Adjust the pitcher to stop additional aeration. Maintain movement to integrate the microfoam. Stop steaming at the café's target temperature. Turn the steam off before removing the wand. Wipe and purge the steam wand immediately. Inspect and swirl the milk. Pour promptly. Rinse the pitcher and return it to the appropriate location.
